It's been two weeks since I challenged myself to Live Like Martha. It's inspired me to cook more meals from scratch, to try to get organized and to spend less time watching TV and more time crafting and reading. I'm hoping that in the coming weeks I can spend more time getting my house in order, especially my office.
Today I went out and bought
Martha Stewart craft supplies so that I have the tools on hand to make beautiful craft projects. Here's what I bought: precision scissors, hole punch, heart-shaped hole punch, craft glue, glue pen, glitter set, bone folder, craft knife (
xacto), self-healing craft cutting board, black-eyed Susan crepe paper flower kit.
I'm looking forward to making some glitter crafts and making the flower kit. I'm thinking I'll keep the flowers in either the living room or kitchen. The crepe paper roses are on the dining room table.
Recipes For dinner I made black bean
quesdillas with red & yellow peppers. This is a quick & easy, healthy meal.
1 tbs. olive oil
1 red bell pepper, diced
1
yellow bell pepper, diced
1/2 jalapeno pepper, minced
1/2 large red onion, diced
3 cloves garlic, minced or pressed
2 tbs.
sliced black olives
3 plum tomatoes, diced
1 can black beans, drained & rinsed
2 tbs. red wine vinegar
1/2 tsp. oregano
1 cup
monterey jack cheese, shredded
1 cup cheddar cheese, shredded
4 large flour tortillas
Saute the peppers, onion & garlic in olive oil until soft. Stir in olives, tomatoes, red wine vinegar and oregano. Place 1/4 bean mixture onto half of tortilla, top with shredded cheeses. Place
quesdilla onto
pre-heated
panini press. Cook until tortilla is lightly browned and cheese is melted.
